  • 1 head cauliflower, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • ¼ cup coconut milk
  • ½ tsp sea salt
  • ½ tsp black pepper

For the Grain-Free Pecan Pie:

  • For the Crust:
    • 1 ½ cups almond flour
    • 2 tbsp coconut flour
    • ¼ cup coconut oil or grass-fed ghee, melted
    • 1 tbsp maple syrup
    • 1 egg (or flax egg for vegan option)
  • For the Filling:
    • 1 cup pecans, chopped
    • ½ cup coconut sugar
    • ¼ cup maple syrup
    • 2 tbsp coconut milk
    • 1 tsp vanilla extract
    • ¼ tsp sea salt

Instructions

For the Turkey:

  1. Preheat oven to 350°F (175°C).
  2. Pat turkey dry and rub with olive oil, garlic, herbs, salt, and pepper.
  3. Stuff the cavity with lemon halves for added moisture and flavor.
  4. Place in a roasting pan and pour broth into the pan to keep it moist.
  5. Roast for 2 ½ to 3 hours, basting occasionally.
  6. Let rest for 15 minutes before carving.

For the Mashed Cauliflower:

  1. Steam or boil cauliflower until very tender (about 10 minutes).
  2. Sauté garlic in olive oil for 1 minute.
  3. Blend cauliflower, garlic, coconut milk, salt, and pepper until smooth.
  4. Drizzle with extra olive oil before serving.

For the Pecan Pie:

  1. Mix crust ingredients and press into a pie pan. Bake for 10 minutes, then set aside.
  2. Heat coconut sugar, maple syrup, coconut milk, and salt in a saucepan until thickened.
  3. Stir in pecans and vanilla, then pour over the crust.
  4. Bake for another 15-20 minutes, then let cool before slicing.
