  • 1 cup kefir (plain, full-fat preferred)
  • ½ cup unsalted butter (melted and slightly cooled)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp salt

Optional Additions:

  • 1 tbsp lemon zest or orange zest (for a citrusy touch)
  • ½ tsp cinnamon or nutmeg (for warmth and spice)
  • ½ cup chocolate chips (for a sweet twist)
  • ½ cup chopped nuts (walnuts or pecans) (for crunch)
  • ½ cup fresh or dried berries (for a fruity flavor)

Instructions

Step 1: Prepare the Batter

1️⃣ Preheat oven to 350°F (175°C) and grease a 9×13-inch sheet cake pan.
2️⃣ In a large bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3️⃣ In another bowl, beat eggs and sugar until light and fluffy.
4️⃣ Add melted butter, vanilla extract, and kefir, then mix until well combined.
5️⃣ Gradually fold in the dry ingredients, stirring gently until the batter is smooth.

💡 Pro Tip: Avoid overmixing to keep the cake light and airy.

Step 2: Bake the Cake

1️⃣ Pour the batter into the prepared cake pan and spread evenly.
2️⃣ Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
3️⃣ Remove from the oven and let the cake cool in the pan for 10 minutes.
4️⃣ Transfer to a wire rack to cool completely before adding any frosting or glaze.
