  • 1 tbsp unsweetened applesauce (egg substitute)
  • 2 tbsp milk (dairy or plant-based)
  • ½ tsp vanilla extract
  • 1 tsp melted butter (or coconut oil)

Instructions

  • In a microwave-safe mug, whisk together flour, sugar, baking soda, salt, and pumpkin spice.
  • Stir in the pumpkin puree, applesauce, milk, vanilla, and melted butter until smooth.
