Description

A hearty and nutritious purple black bean soup, packed with fiber, protein, and antioxidants. This delicious and comforting soup is easy to make with canned or dried black beans and gets its beautiful purple hue from natural anthocyanins. Perfect for a healthy, satisfying meal!

  • 1 cup dried black beans (or 2 cans, drained and rinsed)
  • 4 cups vegetable broth (or water)
  • 1 medium red onion, diced
  • 3 garlic cloves, minced
  • 1 medium carrot, chopped
  • 1 celery stalk, chopped
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • 1 teaspoon oregano
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 bay leaf
  • Juice of 1 lime

Optional Add-ins for Extra Flavor:

  • ½ teaspoon chili powder or cayenne (for heat)
  • ½ cup diced tomatoes (for a tangy kick)
  • ½ cup corn kernels (adds sweetness & texture)
  • 1 small sweet potato, diced (adds natural creaminess)
  • ¼ cup chopped cilantro (for garnish)

Instructions

1️⃣ Prepare the Black Beans:

  • For Dried Beans: Rinse and drain black beans. If not soaking, simmer for 1.5 to 2 hours until tender.
  • For Canned Beans: Drain and rinse beans to remove excess sodium.

2️⃣ Sauté the Aromatics:

  • In a large pot, heat 1 tbsp olive oil over medium heat.
  • Add diced red onion, garlic, carrot, and celery.
  • Sauté for 5 minutes, stirring occasionally.

3️⃣ Add Spices & Broth:

  • Stir in cumin, smoked paprika, oregano, salt, and black pepper.
  • Cook for 30 seconds until fragrant.
  • Pour in vegetable broth and add black beans.
  • Toss in 1 bay leaf for depth of flavor.

4️⃣ Simmer & Cook:

  • Bring to a boil, then reduce heat and simmer:
    • Dried Beans: Cook for 90-120 minutes, stirring occasionally.
    • Canned Beans: Simmer for 15-20 minutes.

5️⃣ Adjust Consistency:

  • For thicker soup, blend ½ cup of the soup and stir it back in.
  • For chunky soup, lightly mash some of the beans.
  • If too thick, add extra broth to thin it out.

6️⃣ Final Touches:

  • Stir in fresh lime juice before serving.
  • Adjust salt and seasoning as needed.

7️⃣ Serve & Garnish:

  • Top with chopped cilantro, avocado slices, or tortilla chips.
  • Serve hot with crusty bread or rice on the side.

Notes

For a richer, deeper color, use red onions and carrots in the soup.
