Ingredients
For the Beans:
- 1 ½ cups dried kidney beans (or 2 cans, drained and rinsed)
- 3 cups water (for boiling)
- 1 bay leaf (optional for extra flavor)
For the Squash & Seasoning:
- 2 cups squash, cubed (butternut, acorn, or kabocha)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 tbsp olive oil or coconut oil
- 2 cups vegetable or chicken broth
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp turmeric
- Salt & black pepper to taste
Instructions
Step 1: Prepare & Cook the Kidney Beans
1️⃣ If using dried kidney beans:
- Soak the beans overnight (8-12 hours) in water.
- Drain, rinse, and boil in fresh water for 10 minutes, then simmer for 45-60 minutes until soft.
- Drain and set aside.
2️⃣ If using canned kidney beans:
- Drain and rinse under cold water.
Step 2: Sauté Aromatics & Spices
1️⃣ Heat oil in a large pot over medium heat.
2️⃣ Add onions and sauté for 2-3 minutes until soft.
3️⃣ Stir in garlic and ginger and cook for 30 seconds until fragrant.
4️⃣ Add cumin, smoked paprika, turmeric, salt, and pepper, stirring for another minute.
Step 3: Add Squash & Simmer
1️⃣ Add cubed squash and stir to coat with spices.
2️⃣ Pour in broth and bring to a boil.
3️⃣ Reduce heat and simmer for 10-15 minutes until squash is fork-tender.
Step 4: Combine & Finish Cooking
1️⃣ Add cooked kidney beans and mix well.
2️⃣ Simmer for another 5-10 minutes for the flavors to meld.
3️⃣ Taste and adjust seasonings if needed.
4️⃣ Let sit for a few minutes before serving.
Notes
✔️For extra creaminess, stir in ½ cup coconut milk before serving.
✔️ For added heat, mix in ¼ tsp red pepper flakes or cayenne pepper.
✔️ Store leftovers in an airtight container in the fridge for up to 4 days.
