- ½ cup cooked quinoa
- 1 boiled egg, sliced
- ½ avocado, sliced
- ¼ cup cherry tomatoes, halved
- 1 tbsp pumpkin seeds
- 1 tsp olive oil
- ½ tsp lemon juice
- Salt & black pepper to taste
Instructions
- Cook quinoa and let it cool slightly.
- Arrange quinoa, boiled egg, avocado, and cherry tomatoes in a bowl.
- Sprinkle with pumpkin seeds, drizzle with olive oil & lemon juice.
- Add salt and pepper to taste.
- Enjoy immediately!
