Ingredients

Scale
  • ½ cup cooked quinoa
  • 1 boiled egg, sliced
  • ½ avocado, sliced
  • ¼ cup cherry tomatoes, halved
  • 1 tbsp pumpkin seeds
  • 1 tsp olive oil
  • ½ tsp lemon juice
  • Salt & black pepper to taste

Instructions

  • Cook quinoa and let it cool slightly.
  • Arrange quinoa, boiled egg, avocado, and cherry tomatoes in a bowl.
  • Sprinkle with pumpkin seeds, drizzle with olive oil & lemon juice.
  • Add salt and pepper to taste.
  • Enjoy immediately!

Notes
