Main Ingredients
  • 5 pieces Persian cucumbers Can substitute with English cucumbers.
  • 1/2 tsp salt To enhance flavor and draw out moisture.
  • 1/2 tbsp sesame oil Adds a nutty flavor.
  • 3/4 tbsp light soy sauce Use gluten-free soy sauce for a gluten-free version.
  • 1/2-1 tbsp sugar Adjust to taste.
  • 3/4 tbsp rice vinegar Provides acidity.
  • 1 tbsp chili oil Add less for a milder flavor.
  • 1/2 tbsp sesame seeds For garnish.
  • 1/2 tbsp garlic (minced) Optional for added flavor.

Method
 

Preparation
  1. Rinse the cucumbers and slice one end at an angle to create oval slices.
  2. Continue cutting the cucumber at an angle until fully sliced to your desired thickness.
  3. Place the slices in a bowl or container and sprinkle with 1/2 tsp of salt. Toss gently to coat.
  4. Refrigerate for at least 20 minutes to draw out excess water.
  5. After chilling, drain the water and rinse the slices briefly before returning them to the bowl.
  6. Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and optional garlic.
  7. Stir all ingredients together until well combined and serve.

Notes

The salad tastes even better the next day as the flavors meld. Store in an airtight container and consume within 2-3 days for best quality.
