Ingredients
  

Meats
  • 3 lbs chuck roast, cut into 1/2-inch cubes For a tender texture.
  • 1 lb ground beef (80/20) Adds flavor and richness.
Vegetables and Aromatics
  • 2 large yellow onions, diced For sweetness and flavor.
  • 6 cloves garlic, minced
Spices
  • 3 tbsp chili powder Main spice for flavor.
  • 2 tbsp ancho chili powder Adds depth and sweetness.
  • 1 tbsp smoked paprika For a smoky flavor.
  • 2 tsp ground cumin
  • 1 tsp cayenne pepper Adjust for spice preference.
  • 1 tsp dried oregano
  • 1/2 tsp ground coriander
  • Salt and black pepper to taste
Liquids
  • 2 cups beef broth
  • 1 can (28 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 2 tbsp apple cider vinegar Helps balance flavors.
Sweeteners and Others
  • 2 tbsp brown sugar Balances acidity.
Toppings (optional)
  • Shredded cheddar, sour cream, green onions, cilantro Customize to taste.

Method
 

Preparation
  1. Pat the cubed chuck roast dry with paper towels, then season generously with salt and pepper.
  2. In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat.
  3. Brown the chuck roast cubes in batches for about 3-4 minutes each.
  4. Transfer them to a plate once browned.
  5. In the same pot, add the ground beef and cook until browned, breaking it apart with a spoon.
  6. Transfer ground beef to the plate with the chuck roast.
  7. Add the remaining tablespoon of oil, then toss in the diced onions and cook for about 5 minutes.
  8. Add the minced garlic and cook for another minute until fragrant.
Cooking
  1. Stir in the chili powder, ancho chili powder, smoked paprika, cumin, cayenne, oregano, and coriander. Cook for 1-2 minutes until fragrant.
  2. Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
  3. Add the crushed tomatoes, tomato paste, apple cider vinegar, brown sugar, and bay leaves.
  4. Return all the browned beef to the pot and mix well.
  5. Bring the mixture to a boil, then reduce heat to low, cover and let it simmer for 2-2.5 hours.
  6. Stir every 30 minutes until the chuck roast is tender and the sauce has thickened.
Finishing Touches
  1. Remove bay leaves, taste and adjust seasoning if necessary, then let it rest for about 10 minutes before serving.
  2. Ladle the chili into bowls and top with desired toppings.

Notes

For storing leftovers, keep in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Adjust spices to your taste.
