Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
For the Bang Bang Sauce
  • ½ cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 1-2 tsp sriracha (adjust to taste)
  • 1 tsp honey (optional)
  • 1 clove garlic, minced
For the Bowl
  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1 cup red cabbage, shredded
  • 2 green onions sliced
  • Sesame seeds (optional, for garnish)
  • Fresh cilantro (optional, for garnish)

Method
 

Cooking the Chicken
  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken with salt and pepper. Cook until golden brown and fully cooked, about 6–8 minutes.
Making the Sauce
  1. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and minced garlic to create the Bang Bang sauce.
  2. Drizzle half of the sauce over the cooked chicken and toss to coat evenly.
Assembling the Bowl
  1. Assemble your bowls by placing the cooked rice at the bottom. Top with the saucy chicken, shredded carrots, cucumber, red cabbage, and chopped green onions.
  2. Drizzle the remaining Bang Bang sauce over the top for that extra kick.
  3. Garnish with sesame seeds and cilantro if desired. Serve immediately!

Notes

For best results, use a hot skillet for a nice sear on the chicken. You can make the sauce in advance to save time.
