Ingredients
  

For the Chicken
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup buttermilk Can substitute with a plant-based alternative.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1 cup panko breadcrumbs Can substitute with gluten-free breadcrumbs.
  • Vegetable oil for frying
For the Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha sauce Adjust according to taste.
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
For the Sliders
  • 12 mini slider buns
  • 1 cup shredded lettuce
  • 1/2 cup thinly sliced red onion
  • 1/2 cup pickles Optional
  • Fresh cilantro for garnish Optional

Method
 

Marinate the Chicken
  1. Cut the chicken breasts into bite-sized pieces.
  2. In a large bowl, whisk together buttermilk, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Add in the chicken, ensuring it’s submerged in the mixture.
  4. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
Make the Bang Bang Sauce
  1. In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and garlic powder.
  2. Taste it and adjust the heat or sweetness based on your preference for a perfect balance.
Dredge and Fry the Chicken
  1. In a shallow dish, combine flour and panko breadcrumbs.
  2. Remove the marinated chicken from the fridge and dredge each piece in the flour mixture.
  3. Carefully fry in heated oil at 350°F (175°C) in batches until golden and cooked through (about 3-4 minutes per side).
  4. Drain on paper towels.
Assemble the Sliders
  1. Lightly toast the slider buns for an added crunch.
  2. Spread a layer of Bang Bang sauce on the bottom half.
  3. Stack on crispy chicken, shredded lettuce, red onion, and pickles if you like.
  4. Garnish with cilantro before placing the top bun on.
Serve
  1. Transfer the sliders to a serving platter and serve with extra Bang Bang sauce on the side for those who want a little more zing.
