Method
Preparation
- Preheat your oven to 400°F or set your air fryer to 380°F.
- In a bowl, toss the salmon cubes with garlic powder, smoked paprika, salt, and black pepper until thoroughly coated.
- Dredge the seasoned salmon cubes in panko breadcrumbs, ensuring each piece is well-coated. For extra crispiness, lightly spray with olive oil.
Cooking
- Place the coated salmon on a parchment-lined baking sheet or in your air fryer. Bake for 12-15 minutes or air fry for 8-10 minutes, or until golden brown and crispy.
- In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice. Taste and adjust the spiciness to your liking.
Assembly
- Start with a base of rice, top with the crispy salmon bites, and add shredded cabbage, avocado slices, carrots, and green onions.
- Drizzle with the bang bang sauce and garnish with fresh cilantro and sesame seeds.
Notes
Store the components separately to keep freshness. Salmon bites can be kept in an airtight container in the fridge for up to 3 days. For optimal crispiness, reheat in the oven.
