Bang Bang Salmon Bites

Ingredients
  

For the salmon
  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
For the Bang Bang sauce
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha adjust to spice level
  • 1 tsp honey (optional)
  • Juice of ½ lime
For serving
  • 2 cups cooked jasmine rice (or cauliflower rice) for a lighter option
  • 1 cup shredded purple cabbage
  • 1 each avocado (sliced)
  • ½ cup shredded carrots
  • 2 each green onions (sliced)
  • to taste fresh cilantro and sesame seeds for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or preheat your air fryer.
  2. In a bowl, combine the garlic powder, smoked paprika, salt, and pepper. Add the salmon cubes and toss until well-coated.
  3. Pour the panko breadcrumbs into a shallow dish. Drizzle the salmon with olive oil or spray, then toss gently in the breadcrumbs until coated.
Cooking
  1. Arrange the coated salmon bites in a single layer on a baking sheet or in the air fryer. Bake for about 10-12 minutes or cook in the air fryer for about 8-10 minutes until golden and crispy.
  2. In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice. Adjust the heat to your liking by varying the sriracha.
Assembly
  1. To serve, place a scoop of jasmine rice or cauliflower rice in a bowl. Top with crispy salmon bites, shredded cabbage, avocado slices, shredded carrots, and green onions.
  2. Drizzle with the Bang Bang sauce and finish with fresh cilantro and sesame seeds as garnish.

Notes

To keep salmon bites fresh, store them in an airtight container in the refrigerator for up to three days. Reheat in the oven or air fryer to restore crispiness. Consider using gluten-free panko or replacing salmon with shrimp or chicken for variety.
