This BBQ ground beef and potato casserole is everything a cozy weeknight dinner should be meaty, cheesy, smoky, and baked to golden perfection. It’s a comfort classic that came from a happy kitchen accident and turned into a family favorite.

Ingredients
  

  • 1 lb 450g ground beef
  • 4 medium baking potatoes thinly sliced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup barbecue sauce your favorite variety
  • 1 1/2 cups shredded cheddar cheese
  • 1 tbsp olive oil or butter
  • Salt and pepper to taste
  • Optional: 1/2 cup diced bell peppers
  • Optional: chopped green onions or tomatoes for garnish
  • Cooking spray or oil for greasing

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat oil and sauté diced onion and garlic until fragrant. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in barbecue sauce and optional bell peppers. Simmer for 2–3 minutes.
  4. Using a mandoline or sharp knife, slice potatoes thinly (about 1/8–1/4 inch thick).
  5. In the prepared baking dish, layer half the potatoes, then half the beef mixture, and sprinkle with cheese. Repeat layers, finishing with a cheese layer.
  6. Cover with foil and bake for 35–40 minutes until potatoes are tender.
  7. Uncover and bake an additional 10–15 minutes until cheese is bubbly and golden.
  8. Let rest 5–10 minutes before serving. Garnish with green onions or tomatoes if desired.

Notes

For a twist, try sweet potatoes or use pepper jack for extra heat. You can also make it ahead and refrigerate until ready to bake.
