Method

Preparation
  1. Remove the chuck eye steak from the fridge and let it come to room temperature for 30 minutes.
  2. Pat the steak dry and season generously with salt, pepper, and garlic powder.
Grilling Steps
  1. Preheat your grill to high heat (450°F–500°F).
  2. Place the steak on the grill and sear for 4–5 minutes per side for medium-rare.
  3. Let the steak rest for 5–10 minutes after grilling before slicing.
Pan-Searing Steps
  1. Heat a cast-iron skillet over medium-high heat and add the high-smoke-point oil.
  2. Sear each side of the steak for 3–4 minutes, then finish cooking in a preheated oven if necessary.
  3. Rest the steak for 5–10 minutes before slicing.
Braising Steps
  1. Sear the steak in a hot skillet to develop a crust, then remove and set aside.
  2. In the same skillet, sauté onions, garlic, and carrots; deglaze with red wine or beef broth.
  3. Return steak to the skillet and add enough liquid to cover halfway, then cover and simmer on low heat or bake in the oven at 300°F for 2–3 hours.

Notes

Resting the steak after cooking is essential for retaining its juices. Always slice against the grain for optimal tenderness. Pair with grilled vegetables, baked potatoes, or a chimichurri sauce.
