  • 2 lbs beef chuck, cut into cubes Substitute with other cuts as long as they have adequate marbling.
  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced Can be substituted with sweet potatoes or other seasonal vegetables.
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth Use low-sodium broth if preferred.
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Cooking Process
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown them on all sides to develop rich flavor.
  3. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  4. Stir in the tomato paste, thyme, and rosemary for a fragrant base.
  5. Pour in the beef broth and bring the mixture to a gentle simmer.
  6. Add the sliced carrots and diced potatoes, then cover the pot.
  7. Reduce heat and let everything simmer for 1.5 to 2 hours, or until the beef is fork-tender.
  8. Season with salt and pepper to taste just before serving.

Notes

Serve with fresh herbs for garnish and crusty bread for dipping. Leftovers can be stored in an airtight container for 3-4 days in the fridge or frozen for up to 3 months.
