Ingredients
  

Base Ingredients
  • 1 tbsp olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef (80/20 or leaner)
Spices
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp cayenne (optional) Can be adjusted or left out for less spice.

Tomato Base and Broth
  • 1 can (6 oz) tomato paste
  • 1 can (15 oz) diced tomatoes (fire-roasted preferred)
  • 2 cups beef broth (low-sodium recommended)
Beans
  • 1 can (15 oz) red kidney beans, drained & rinsed
  • 1 can (15 oz) black beans, drained & rinsed

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the diced onion for about 3–4 minutes until soft.
  3. Add minced garlic and cook for an additional 30 seconds.
  4. Introduce the ground beef to the pot. Break it up with a spatula and brown for 5–7 minutes. Drain any excess fat if necessary.
Cooking
  1. Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Let it cook for 1 minute to bloom the spices.
  2. Mix in the tomato paste and cook for another minute.
  3. Pour in the diced tomatoes and beef broth, stirring well to combine.
  4. Add the drained kidney beans and black beans. Bring the chili to a simmer.
  5. Allow it to simmer uncovered for 30–40 minutes, stirring occasionally until it thickens to your desired consistency.
  6. Taste and adjust seasoning if necessary. Serve hot with your favorite toppings!

Notes

This chili can be stored in the fridge for up to 5 days in an airtight container or frozen for up to 3 months. Allowing your chili to sit for a while before serving enhances its flavors—it’s even better the next day!
