  1. Begin by heating olive oil in a large pot over medium-high heat. Add the diced onion and cook for 3-4 minutes until it's soft and translucent.
  2. Stir in the minced garlic and cook for 1-2 minutes until fragrant—be careful not to burn it!
  3. Introduce the ground beef to the pot, breaking it up as you cook. Allow it to brown for about 5-7 minutes until no longer pink. Drain any excess fat if necessary.
  4. Sprinkle in the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir well and let the spices bloom for 1-2 minutes.
  5. Add the tomato paste, mixing thoroughly with the beef and spices to help thicken the chili. Cook for an additional 2-3 minutes.
  6. Stir in the diced tomatoes, beef broth, and salt and pepper to taste. Bring the mixture to a simmer.
  7. Reduce the heat and let the chili simmer for 20-25 minutes. This is crucial for the flavors to meld and the chili to thicken.
  8. Finally, add the kidney beans and black beans. Stir everything to combine and allow it to simmer for another 10-15 minutes.
  9. Give it a taste and tweak the seasonings as needed, adding more salt, pepper, or chili powder if desired.
