  • 1 lb diced chicken breast
  • 2 tablespoons black pepper Adjust to taste
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots) Feel free to use any mix of vegetables
  • 3 tablespoons soy sauce Use tamari for gluten-free
  • 2 cloves minced garlic Optional, can substitute with garlic powder
  • 1 tablespoon minced ginger Optional, can substitute with ground ginger
  • 2 tablespoons vegetable oil For cooking
  • to taste salt

Method
 

Cooking
  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add diced chicken and cook until browned and fully cooked, about 5 to 7 minutes.
  3. Stir in minced garlic and ginger, cooking for about 30 seconds until aromatic.
  4. Add the mixed vegetables and cook until crisp-tender, retaining bright colors.
  5. Pour in soy sauce, sprinkle black pepper, and add salt to taste; stir until well-coated.
  6. Serve hot over a bed of cooked rice, garnishing with additional black pepper or chopped green onions if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave until steaming hot. Adjust black pepper to your liking for desired spice level.
