Ingredients
  

For the Donuts
  • 2 tablespoons butter, plus extra for greasing the donut tin Melted butter for the batter and additional for greasing
  • ⅓ cup sugar
  • ⅓ cup whole milk Can substitute with almond milk for a dairy-free option
  • 1 large egg Can use flax egg for a vegan option
  • 1 ½ teaspoons vanilla extract
  • 1 cup all-purpose flour Can substitute with gluten-free flour blend
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup wild blueberries Plus 2 tablespoons for the glaze
For the Glaze
  • 1 cup powdered sugar Also called icing sugar or confectioners' sugar
  • ⅛ teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350ºF (180ºC). Grease a 6-hole donut tin with melted butter and set aside.
  2. In a large microwave-safe mixing bowl, melt the butter for about 20 to 30 seconds.
  3. Once melted, whisk in the sugar, milk, egg, and vanilla until smooth.
  4. Sift the flour into the bowl, add the baking powder and salt, and fold gently until combined.
  5. Add the wild blueberries and fold gently until evenly distributed.
  6. Spoon the batter into a piping bag and fill each donut hole. Smooth the tops with a wet fingertip.
Baking
  1. Bake in the preheated oven for 13 to 15 minutes.
  2. Cool the donuts on a wire rack for 10 minutes before transferring them to a plate.
Glazing
  1. Microwave 2 tablespoons of blueberries for 15 to 20 seconds, mash, and strain to reserve the juice.
  2. In another bowl, sift the powdered sugar and add vanilla extract. Gradually mix in the blueberry juice until achieving a honey-like consistency.
  3. Glaze the cooled donuts evenly and let set for at least 20 minutes before serving.

Notes

These donuts can be served with fresh berries or whipped cream. For variations, you can add lemon zest, use different berries, or try whole wheat flour for a healthier option.
