  • 4 cups broccoli florets

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, around 5 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Add the broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer until broccoli is tender, about 10-15 minutes.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, transfer it to a blender in batches.
  5. Return the pureed soup to the pot. Stir in the milk, grated cheddar cheese, salt, pepper, and nutmeg, if desired. Cook over low heat until the cheese has melted and the soup is heated thoroughly.
  6. Serve warm and relish your healthy broccoli cheddar soup!
