Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Filling
  • 2 cups broccoli florets (chopped) Fresh or frozen. If using frozen, thaw and drain excess moisture.
  • 1 cup shredded cheddar cheese Feel free to swap with other cheese varieties.
  • 4 ounces cream cheese (softened) Low-fat versions can be used for a healthier twist.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Topping
  • 1/2 cup breadcrumbs Can be made gluten-free.
  • 2 tablespoons melted butter
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped broccoli, cheddar cheese, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Stir until well mixed.
  3. Using a sharp knife, carefully cut a pocket in the side of each chicken breast, ensuring not to cut all the way through.
  4. Generously stuff each pocket with the broccoli and cheese mixture, packing it in well.
  5. If needed, use toothpicks to secure the openings of the chicken breasts to keep the filling from spilling out during cooking.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
  2. In a small bowl, mix breadcrumbs with melted butter until evenly coated.
  3. Transfer the seared chicken breasts to a baking dish and sprinkle the breadcrumb mixture evenly over the top of each breast.
  4. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through with an internal temperature of 165°F (74°C).
  5. Allow the chicken to rest for a few minutes before serving warm, alongside rice or your favorite vegetables.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in a 350°F (175°C) oven or microwave (be cautious not to overcook).
