Main Ingredients
  • 2 cups butternut squash, peeled and diced
  • 2 cups apples, cored and sliced (tart variety like Granny Smith)
Sweet Mix
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 tbsp butter, melted
Oat Topping
  • 1/2 cup oats
  • 1/4 cup chopped nuts (walnuts or pecans) Can experiment with different types of nuts.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Peel and dice the butternut squash into uniform pieces for even cooking.
  3. Slice the apples, remembering to remove the core and seeds.
  4. In a large mixing bowl, combine the diced squash and apple slices with brown sugar, cinnamon, nutmeg, salt, and melted butter. Toss well to coat.
  5. Grease a 9x13 inch baking dish and spread the squash and apple mixture evenly into the dish.
Topping and Baking
  1. In another bowl, mix the oats, chopped nuts, and a sprinkle of cinnamon. Drizzle with the remaining melted butter and stir to combine.
  2. Evenly sprinkle the oat mixture over the squash and apple mixture in the baking dish.
  3. Bake for 35-40 minutes, or until fork-tender.
  4. Allow to cool slightly before serving. Optional: Enhance your dish with a scoop of whipped cream or ice cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to four days. Can also be frozen for longer storage. For added flavor, add a splash of lemon juice to the apples after slicing to prevent browning.
