  • 1 pound ground chicken You can use ground turkey or beef as alternatives.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 2 tablespoons Cajun seasoning Adjust to match your spice preference.
  • 1 cup tomato sauce
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
For the Cheese Sauce
  • 1 cup shredded cheddar cheese Can substitute with pepper jack or mozzarella.
  • 1/2 cup milk For cheese sauce
  • 2 tablespoons butter For cheese sauce
  • 2 tablespoons flour For cheese sauce
For Serving
  • 4 pieces brioche buns Toast until golden brown.

Method
 

Preparation
  1. In a large skillet, add the ground chicken. Cook over medium heat until browned, about 5-7 minutes.
  2. Add the chopped onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  3. Stir in the Cajun seasoning, tomato sauce, and Worcestershire sauce. Season with salt and pepper. Simmer for about 10 minutes.
Cheese Sauce
  1. In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes.
  2. Gradually whisk in the milk, stirring constantly until the mixture thickens.
  3. Remove from heat and stir in the shredded cheddar cheese until it melts and becomes smooth.
Assembly
  1. Toast the brioche buns until golden brown.
  2. To serve, pile the Cajun chicken mixture onto the bottom half of each bun. Drizzle with cheese sauce and cover with the top half of the bun.

Notes

If you have leftovers, store them in an airtight container in the fridge for 3-4 days. Reheat the chicken mixture as needed and assemble fresh buns when ready to eat. Consider adding chopped green onions or additional vegetables like corn or diced tomatoes for extra flavor.
