Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add sliced andouille sausage, cooking until browned.
  3. Toss in the chopped onions, bell peppers, and celery; sauté until softened.
  4. Stir in diced potatoes and sprinkle in Cajun spices.
  5. Pour in chicken broth, bringing the mixture to a boil.
  6. Reduce heat and let it simmer until the potatoes are tender.
  7. Stir in heavy cream and cheddar cheese until melted and well combined.
  8. Season with salt and pepper to taste.
