  • 1 lb andouille sausage, sliced
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons Cajun spice blend
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Cooking Steps
  1. In a large pot over medium heat, add the olive oil.
  2. Add the sliced andouille sausage. Cook until browned, about 5-6 minutes.
  3. Toss in the chopped onion, celery, and bell pepper. Sauté until tender, roughly 4-5 minutes.
  4. Stir in the diced potatoes and Cajun spice blend, mixing well.
  5. Add the chicken broth and bring to a boil. Reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  6. Stir in the heavy cream and cheddar cheese, cooking until the cheese is melted and everything is well combined.
  7. Season with salt and pepper to taste. Serve hot and enjoy!

Notes

Garnish with chopped green onions or a drizzle of hot sauce for extra flavor. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for 2-3 months.
