  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 3 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 cup red lentils, rinsed and drained
  • 4 cups vegetable broth Can be substituted with chicken broth or water
  • to taste salt and pepper
  • for garnish Fresh parsley Optional

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add sliced onions and sauté until they caramelize, about 15-20 minutes. Stir frequently to prevent burning.
  3. Toss in the minced garlic, diced carrots, and celery; cook for an additional 5 minutes until softened.
  4. Stir in the ground cumin and ground coriander, cooking for another minute until fragrant.
  5. Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and let it simmer.
  6. Cook for 25-30 minutes, or until lentils are tender.
  7. Season with salt and pepper to taste.
  8. If you prefer a smoother texture, blend the soup with an immersion blender.
  9. Serve warm, garnished with fresh parsley.

Notes

This soup can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to three months. For added nutrition, consider incorporating seasonal vegetables.
