Preparation
  1. In a large bowl, mix together the grated carrots and chopped apples until evenly combined.
  2. In a separate small bowl, whisk together the mayonnaise or Greek yogurt, honey (if using), lemon juice, salt, and pepper to create your dressing.
  3. Drizzle the dressing over the carrot and apple mixture and gently toss to coat all the components.
  4. If desired, sprinkle chopped walnuts or raisins on top for an added layer of texture.
  5. Serve immediately, or let it chill in the refrigerator for a short while to allow the flavors to meld beautifully.

Notes

For a lighter dish, swap mayonnaise with a homemade vinaigrette. Store leftovers in an airtight container in the fridge for up to 2-3 days, adding nuts just before serving.
