Ingredients
  

Main Ingredients
  • 1 cup medjool dates (pits removed) Use fresh dates for best results.
  • 1/3 cup shredded carrots
  • 1 cup walnuts Can be substituted with pecans or sunflower seeds for a nut-free option.
  • 1 tbsp chia seeds Can be replaced with flaxseeds.
  • 1/3 cup shredded unsweetened coconut Plus an extra 1/2 cup for rolling.
  • 1/2 tsp cinnamon Adjust according to taste.
  • 1/4 tsp nutmeg Adjust according to taste.
  • 1 pinch salt
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Add all ingredients into a food processor.
  2. Pulse until everything is well combined and forms a sticky dough.
  3. Using a spoon, scoop out portions of dough and roll them into balls.
  4. Roll each ball in the extra shredded coconut to coat evenly.
  5. Place the energy balls in the fridge for at least one hour to firm up.

Notes

These energy balls can be enjoyed as a pre-workout snack, a midday treat or crumbled over yogurt. Store in an airtight container in the fridge for about a week or freeze for up to three months. For the best flavor, use fresh spices and soak dry dates if necessary.
