Preparation
  1. Begin by melting the butter in a large pot over medium heat. Add the diced onion and garlic, cooking until soft.
  2. Stir in the diced potatoes and chopped broccoli. Cook for about 5 minutes, allowing the vegetables to slightly soften.

  1. Pour in the broth and bring the mixture to a boil. Reduce heat and let it simmer for 15-20 minutes until the potatoes are tender.
  2. Use an immersion blender to puree the soup to your desired consistency. For a chunkier texture, blend less.
  3. Stir in the milk or cream and shredded cheddar cheese. Cook until the cheese is fully melted, ensuring everything is well combined.
  4. Season with salt and pepper to taste.
Serving
  1. Serve the soup hot in bowls, optionally garnished with additional cheddar cheese, sour cream, freshly cracked black pepper, and chopped parsley.
