Cheese Filling
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese Can substitute with cheddar or pepper jack.
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
Creamy Sauce
  • 1/2 cup heavy cream
  • Additional spinach for sauce
Cooking Ingredients
  • Olive oil For searing the chicken.
Serving Suggestions
  • Rice or potatoes For serving on the side.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine cream cheese, mozzarella, chopped spinach, and minced garlic. Season with salt and pepper.
  3. Carefully slice a pocket into each chicken breast and fill it with the cheese mixture.
Cooking
  1. In a skillet, heat olive oil over medium heat and sear each stuffed chicken breast for about 4-5 minutes on each side until golden brown.
  2. Place your seared chicken in a baking dish.
  3. In another bowl, mix heavy cream with some additional spinach and pour it over the chicken.
  4. Put it in the oven and bake for 25-30 minutes until the chicken is cooked through.
Serving
  1. Enjoy your flavorful chicken with a side of rice or potatoes.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. For longer storage, freeze for up to three months. Reheat in the oven at 350°F until warmed through.
