Preparation
  1. Heat the olive oil in a large pot over medium heat. Add the diced onions and sauté until translucent.
  2. Stir in the minced garlic and cook for about 1 minute until fragrant.
  3. Sprinkle in the flour and stir to create a roux. Cook for a few minutes until lightly golden.
  4. Gradually whisk in the chicken broth, ensuring to combine well and avoid lumps. Bring to a simmer.
  5. Add the heavy cream and season with salt, pepper, onion powder, Italian seasoning, and paprika.
  6. Toss in the matchstick carrots and uncooked macaroni noodles, allowing everything to simmer until the pasta is tender.
  7. Once cooked, mix in the shredded cheddar and parmesan cheese until melted and creamy.
  8. Taste and adjust seasonings as needed, and serve warm!

Notes

When serving, consider adding a sprinkle of fresh herbs like parsley or chives for a pop of color and flavor. It pairs well with crusty bread or a simple side salad. For a more indulgent flavor, you can add a splash of Worcestershire sauce while cooking the broth.
