  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 4 cups beef broth
  • 1 cup shredded cheese (cheddar or American) Feel free to experiment with other cheeses.
  • 1 cup milk Low-fat options can be used.
  • 1/2 cup cooked, crumbled bacon Can use plant-based bacon for a vegetarian option.
  • Salt and pepper to taste
  • 1 tbsp olive oil

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened, about 2-3 minutes.
  3. Add ground beef, cooking it until browned (about 5-7 minutes), and break it up as it cooks.
  4. Stir in the diced potatoes and pour in the beef broth. Bring to a boil, then reduce heat.
  5. Cover and let it simmer for approximately 20 minutes, until potatoes are tender.
  6. Lower the heat and mix in the milk and shredded cheese, stirring until melted and creamy.
  7. Sprinkle in the crumbled bacon and season with salt and pepper.
  8. Serve hot and enjoy.

Notes

Can be topped with extra cheese or sour cream. Pairs well with crusty breadsticks or salad. For fun, serve in a bread bowl.
