Preparation

  2. In a skillet, melt the butter over medium heat. Add the garlic and mushrooms, sautéing until they soften, about 5 to 7 minutes.
  3. Season the mixture with salt, pepper, and Italian seasoning, stirring well to combine.
  4. Carefully cut pockets into the chicken breasts and fill each with the flavorful mushroom mixture and a generous amount of cheese.
Cooking
  1. In a separate pan, heat some olive oil and sear the stuffed chicken on both sides until golden brown, approximately 3-4 minutes per side.
  2. Transfer the chicken to a baking dish, topping each breast with any remaining cheese.
  3. Bake for 25-30 minutes or until the chicken is thoroughly cooked and no longer pink inside.
