Cheesy Garlic Parmesan Spaghetti

Ingredients
  

Pasta
  • 8 oz spaghetti Use any type of pasta if preferred.
Garlic Sauce
  • 4 cloves fresh garlic, minced Fresh garlic gives the best flavor.
  • ½ cup grated Parmesan cheese Plus extra for topping.
  • 1 cup shredded mozzarella cheese
  • 2 tbsp unsalted butter Use plant-based alternative for vegan option.
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped For garnish.

Method
 

Cooking the Spaghetti
  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook according to the package instructions until al dente, for about 8-10 minutes.
  3. Drain the spaghetti, but reserve about ½ cup of pasta water.
Preparing the Garlic Sauce
  1. In a large skillet, heat the unsalted butter and olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant and golden brown, being careful not to burn it.
  3. Lower the heat, then add the grated Parmesan and shredded mozzarella cheese to the skillet.
  4. Stir until the cheeses melt and form a creamy sauce, adding reserved pasta water to adjust the consistency.
Combining Pasta and Sauce
  1. Add the cooked spaghetti to the skillet and toss to coat in the cheesy garlic sauce.
  2. Season with salt and pepper to taste.
Serving
  1. Plate the pasta and garnish with chopped parsley and extra Parmesan cheese.

Notes

Serve warm with a side salad or garlic bread. For a spicy kick, add red pepper flakes.
