  • 2 cups shredded cheddar cheese For topping and for the sauce
  • 6 strips bacon Cooked until crispy
  • to taste salt and pepper For seasoning the chicken
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 small boneless skinless chicken breasts Sliced and seasoned
  • 2 cups uncooked rotini pasta Can substitute with other pasta types
  • 2 tablespoons butter For making the sauce
  • 2 tablespoons flour For thickening the sauce
  • 1 tablespoon minced garlic For flavoring the sauce
  • 2 cups half and half For a creamy sauce
  • 2 tablespoons dry ranch dressing seasoning mix

Method
 

Preparation
  1. Cook the bacon in a large skillet over low heat until crispy. Set aside, keeping the drippings in the pan.
  2. Slice the chicken breasts, and season them with salt, pepper, onion powder, and Italian seasoning.
  3. Sear the chicken in the reserved bacon drippings over medium-high heat until golden and cooked through, then cube after resting.
  4. Boil rotini pasta in salted water until al dente, then drain.
Sauce Preparation
  1. In the same skillet, melt butter and sauté garlic until fragrant.
  2. Add flour, and gradually mix in the half and half, stirring until smooth and creamy.
  3. Stir in the ranch seasoning and cheese until well combined.
Combine and Serve
  1. Add the cooked pasta to the creamy sauce and fold in the chicken and crispy bacon pieces.
  2. Serve warm, garnished with extra shredded cheese or fresh herbs if desired.

Notes

For added flavor, consider using fresh or homemade ranch seasoning. You can also add vegetables like spinach or bell peppers for nutrition. For a lighter version, use low-fat cheese and half-and-half.
