  • 3-4 pieces boneless, skinless chicken breasts
  • 8 oz Lo Mein noodles (fresh or dried)
  • 1 piece red bell pepper
  • 1 piece yellow bell pepper
  • 2 pieces carrots (thinly sliced)
  • 2 pieces green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Preparation
  1. Gather all your ingredients and chop the vegetables into bite-sized pieces.
  2. Boil the lo mein noodles according to the package instructions until they are al dente. Drain and set aside.
Cooking
  1. Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil and sauté the chicken for about 6-8 minutes until it is golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  2. In the same pan, add the bell peppers, carrots, and green onions. Stir-fry them until they’re tender yet crisp, about 3-4 minutes.
  3. Return the cooked chicken to the skillet. Add the cooked lo mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices you wish. Toss everything together until it’s well mixed.
  4. Plate your Chicken Lo Mein and serve hot, with extra soy sauce if desired.

Notes

For the ultimate experience, serve your Chicken Lo Mein in deep bowls garnished with additional chopped green onions or sesame seeds. Store leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing as it may change the texture of the noodles.
