  • 1 lb boneless, skinless chicken breast or use leftover turkey
  • 4 cups chicken broth or vegetable broth for a vegetarian option
  • 1 cup diced potatoes for adding heartiness
  • 1 cup diced carrots adds sweetness
  • 1 cup diced celery for crunch
  • 1 medium onion, diced for flavor base
  • 1 cup frozen peas adds freshness and color
  • 1 cup heavy cream or half-and-half for a lighter option
  • 2 tbsp olive oil for sautéing vegetables
  • 2 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste adjust for flavor
  • Fresh parsley for garnish adds color and flavor

Method
 

Cooking
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the diced onion, carrots, and celery. Sauté until they’re soft, about 5 minutes.
  3. Toss in the diced chicken breast, cooking until browned all over.
  4. Stir in the chicken broth, potatoes, garlic powder, thyme, salt, and pepper. Bring it to a simmer and let cook until the potatoes are tender, about 15-20 minutes.
  5. Reduce the heat to low, and gently mix in the heavy cream and frozen peas. Cook for an additional 5 minutes until everything is heated through.
  6. Serve hot, garnished with fresh parsley.

Notes

For a different flavor profile, try adding red pepper flakes for a spicy kick, or incorporate a cornstarch slurry for a thicker consistency. Customize with your favorite vegetables or herbs.
