  • 2 pieces chicken breasts Can substitute chicken thighs for a richer flavor.
  • 4 cups chicken broth Vegetable broth can be used for a vegetarian version.
  • 2 pieces carrots, diced
  • 2 pieces celery stalks, diced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • optional Fresh herbs for garnish

Method
 

Preparation
  1. In a large pot, heat a little oil over medium heat. Sauté the chopped onion and minced garlic until they turn translucent.
  2. Add the diced carrots and celery to the pot, cooking for another 5 minutes until slightly tender.
  3. Introduce the chicken breasts, chicken broth, thyme, rosemary, and a pinch of salt and pepper.
  4. Bring everything to a boil, then lower the heat and let it simmer for about 20-25 minutes until the chicken is fully cooked.
  5. Remove the chicken from the pot, shred it, and return the tender pieces back to the soup.
  6. Adjust seasoning as needed, and serve hot. Garnish with fresh herbs if desired.

Notes

To enjoy this soup, serve it with crusty bread or a side salad. For added richness, consider adding cream or cheese before serving. Ensure to store leftovers in an airtight container for up to 4 days.
