  • 1 cup cooked chicken, shredded You can use rotisserie chicken for quicker prep.
  • 1 cup mixed vegetables (like carrots, bell peppers, and cabbage) Feel free to mix and match with fresh, seasonal vegetables.
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 8 pieces spring roll wrappers
  • to taste salt and pepper
  • oil for frying Use enough oil to submerge the rolls.
  • Your favorite savory dipping sauce (like sweet chili or peanut sauce) Serve alongside.

Preparation
  1. In a bowl, combine your shredded chicken, mixed vegetables, soy sauce, sesame oil, salt, and pepper. Mix well until everything is evenly coated.
  2. Lay a spring roll wrapper on a flat surface. Place a few tablespoons of the filling at one end, then roll tightly while folding in the sides as you go.
  3. Repeat with the remaining wrappers and filling until they are all filled and rolled.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Fry the spring rolls until they are golden brown and crispy on all sides, about 3-4 minutes.
  3. Remove the spring rolls and drain them on paper towels to absorb any excess oil.
Serving
  1. Serve them hot with your favorite savory dipping sauce.

Notes

Store leftovers in an airtight container in the refrigerator and consume within 2-3 days. Reheat in the oven for best results. You can freeze uncooked spring rolls, ensuring to separate them with parchment paper.
