  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced chicken breasts and cook until they are browned and fully cooked, about 5-7 minutes.
  3. Stir in the minced garlic and sauté for another minute until fragrant.
  4. Toss in the sliced zucchinis and bell pepper, cooking for about 5 minutes or until they become tender.
  5. Drizzle the mixture with soy sauce, seasoning with salt and pepper to taste.
  6. Serve the stir fry hot over a bed of cooked rice.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 2 months. Consider garnishing with sesame seeds or chopped green onions.
