  • 1 pound 1 pound (about 12-15) large strawberries Thoroughly rinsed and patted dry
  • 6 ounces 6 ounces (1 cup) semi-sweet chocolate chips For coating the strawberries
Cheesecake Filling
  • 4 ounces 4 ounces cream cheese Softened
  • ½ cup ½ cup powdered sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • ¼ cup ¼ cup heavy cream Cold

Method
 

Preparation
  1. Begin by lining a baking sheet with parchment paper and set aside.
  2. Rinse the strawberries thoroughly and pat them dry. Remove the tops and hull the center carefully using a small paring knife.
Melting Chocolate
  1. In a microwave-safe bowl, place the chocolate chips. Heat in 30-second intervals, stirring in between until fully melted and smooth.
Dipping Strawberries
  1. Dip each strawberry into the melted chocolate, ensuring they’re completely covered. Place on the parchment-lined baking sheet to set.
Making Cheesecake Filling
  1. In a large bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer to blend until smooth.
  2. Add the cold heavy cream and beat for an additional 2 minutes until light and fluffy.
Chilling and Filling
  1. Place the bowl with the cheesecake filling in the refrigerator for about 15 minutes to chill.
  2. Using a piping bag with a tip, transfer the chilled cheesecake filling and pipe it into the centers of each chocolate-covered strawberry.
  3. If the filling seems soft, place the strawberries back in the refrigerator for 10-15 minutes for the filling to set.
Serving
  1. Serve immediately, or enjoy them within 12 hours for the best texture and flavor.

Notes

The strawberries may get a little soft after being stored, but they will still taste heavenly! Avoid freezing them as the texture won’t hold up well once thawed. For added flair, consider drizzling with extra melted chocolate or pairing with a dessert wine.
