Preparation
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a stand mixer, cream together the unsalted butter and packed brown sugar on medium-high speed until light and fluffy, about 2 minutes.
- Add the egg and vanilla extract, continuing to mix until pale and smooth, about 2 minutes more.
- In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture on low speed until just combined.
- Gently fold in the freeze-dried strawberries and chocolate chips until evenly distributed.
- Using a 1½ ounce cookie scoop or a large spoon, portion the dough onto the prepared baking sheets, leaving 2 inches between each ball.
Baking
- Bake for 10 to 12 minutes until the edges are firm but the centers remain slightly gooey.
- Remove from the oven and let cool on the baking sheets for about 15 minutes.
Chocolate Coating
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Melt in 30-second increments, stirring until smooth.
- Dip the bottoms of cooled cookies into the melted chocolate, scraping off the excess, then place back on the parchment paper.
- Optionally, drizzle remaining melted chocolate over the tops of the cookies.
- Allow the chocolate to set for about 30 minutes before enjoying.
Notes
Store in an airtight container at room temperature for 3 to 5 days or freeze for up to three months. Use room temperature ingredients for a smoother batter. Don’t overmix the dough to keep cookies tender.
