Brownie Base

Mousse Layer
  • 1 cup heavy cream Heat until just simmering.
  • 8 ounces semi-sweet chocolate, chopped Use high-quality chocolate for best flavor.
  • 1/2 cup powdered sugar
Ganache Topping
  • 1/2 cup heavy cream
  • 4 ounces chopped chocolate

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, melt the butter. Stir in both sugars until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. Gradually mix in the flour, cocoa powder, and salt until just combined; be careful not to overmix.
  5. Pour the brownie batter into the prepared baking pan and spread it evenly.
  6. Bake for 25-30 minutes or until a toothpick in the center comes out with a few moist crumbs. Allow to cool completely.
Mousse Preparation
  1. Heat the heavy cream in a saucepan until just simmering. Pour over the chopped chocolate, and let sit for a minute before stirring until smooth.
  2. Once slightly cooled, fold in the powdered sugar until fully incorporated.
  3. Spread the mousse over the cooled brownies and refrigerate for at least 2 hours.
Ganache Preparation
  1. Heat 1/2 cup heavy cream and pour over 4 ounces of chopped chocolate. Stir until smooth and let cool slightly.
  2. Pour the ganache over the mousse layer and spread it evenly.
  3. Chill until set, then cut into squares and serve.

Notes

For serving, cut into squares and drizzle with extra ganache, or serve on plates topped with fresh berries or vanilla ice cream. Store leftovers in an airtight container in the refrigerator for up to three days.
