Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a large bowl, whisk together cocoa powder, granulated sugar, and melted butter until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gently fold in the flour and salt until just combined—avoid overmixing.
- Pour the batter into the prepared pan and spread it evenly. Bake for 20-25 minutes or until a toothpick comes out with moist crumbs. Allow to cool completely.
Mousse Preparation
- Melt the chocolate chips over a double boiler and let cool slightly.
- In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form. Fold in the melted chocolate until combined.
- Spread the mousse evenly over the cooled brownies and chill in the refrigerator until set.
Serving
- Once set, cut into squares and enjoy. Optionally, dust the top with powdered sugar, grated chocolate, or fresh berries.
Notes
Store leftovers tightly covered in plastic wrap or in an airtight container. They can last for up to 3 days at room temperature or a week in the refrigerator. For longer storage, freeze individually wrapped brownies for up to 3 months.
