Ingredients
  

Brownie Base
  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar Can substitute with brown sugar.
  • 1 cup all-purpose flour Can use gluten-free blend.
  • ½ cup unsalted butter, melted Use dairy-free butter for a dairy-free option.
  • 4 large eggs Use room temperature for best results.
  • 1 teaspoon vanilla extract
Chocolate Mousse
  • 1 cup heavy cream Can substitute with coconut cream for a dairy-free version.
  • 4 ounces semisweet chocolate, chopped Can use dark chocolate for a richer taste.
  • 1 cup powdered sugar
  • 2 tablespoons butter
Optional Topping
  • Chocolate ganache Chocolate ganache (optional for topping) Made using remaining cream and chopped chocolate.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, mix together the cocoa powder, granulated sugar, and all-purpose flour. Pour in the melted butter and combine well.
  3. Add the eggs, one at a time, stirring well after each addition. Stir in the vanilla extract.
  4. Pour the brownie batter into the prepared dish, spreading it out evenly.
  5. Bake for 20-25 minutes or until a toothpick comes out with a few moist crumbs attached. Allow the brownies to cool completely.
Chocolate Mousse
  1. To make the mousse, melt the chopped chocolate in a heatproof bowl set over simmering water. Let it cool slightly once melted.
  2. In a separate bowl, whip heavy cream with powdered sugar until soft peaks form. Gently fold this whipped cream into the melted chocolate until smooth and well-combined.
  3. Spread the mousse over the cooled brownies and refrigerate for at least 2 hours to set.
Chocolate Ganache
  1. To prepare the ganache, heat the remaining cream and pour it over the chopped chocolate, mixing until smooth.
  2. Once the mousse is set, drizzle the ganache on top and allow it to set again before slicing into squares.

Notes

For an elegant presentation, serve on a platter with fresh berries and a dusting of powdered sugar. They pair well with vanilla ice cream or whipped cream.
