  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (or 1 tsp ginger powder for shortcut)
Main Ingredients
  • 4 cups chicken broth (homemade or store-bought)
  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 2 cups egg noodles
  • 2 medium carrots, sliced
  • 1 cup celery, chopped
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Once hot, add the chopped onion and sauté until it becomes translucent, about 4-5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
Cooking
  1. Pour in the chicken broth and bring it to a gentle simmer.
  2. Add the shredded chicken, sliced carrots, and chopped celery. Cook for about 10 minutes, or until the veggies are tender.
  3. Stir in the egg noodles and cook according to the package instructions until al dente.
  4. Season with salt and pepper to taste, adjusting as needed.
  5. Serve hot, garnished with fresh parsley.

Notes

Consider adding chili flakes or a squeeze of fresh lime for additional flavor. Store leftovers in an airtight container for 3-4 days or freeze for longer storage. Reheat with a splash of water or broth if needed.
