  • 1 lb Boneless or bone-in chicken Using bone-in chicken adds more flavor.
  • 3 medium Potatoes (preferably Yukon Gold or Russets)
  • 2 medium Carrots
  • 2 stalks Celery
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 6 cups Chicken broth Homemade or store-bought
  • 1 tbsp Dried thyme
  • 2 leaves Bay leaves
  • to taste Salt and pepper

Method
 

Preparation
  1. Heat a large pot over medium heat and add a drizzle of olive oil.
  2. Sauté diced onions, carrots, and celery until softened.
  3. Incorporate minced garlic and stir for about a minute until fragrant.
  4. Add chicken pieces and let them brown slightly.
  5. Pour in chicken broth and add chopped potatoes along with your chosen herbs.
  6. Bring everything to a boil, then reduce to a simmer. Cook until the chicken is done and potatoes are tender, typically around 30 minutes.
  7. Season with salt and pepper to taste before serving.

Notes

For the perfect chicken soup, use bone-in chicken for more flavor, and don't rush the simmering process. Feel free to add other vegetables like peas or corn for variation.
