Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and fragrant.
- Add the sausage to the skillet. Cook the sausage until it’s browned, breaking it apart as it cooks. Drain excess fat if needed.
- Meanwhile, in a separate pot, steam or roast the diced butternut squash until tender.
- In a large bowl, combine the cooked sausage, sautéed onion and garlic, cooked rice, softened butternut squash, thyme, salt, and pepper. Mix well.
- Transfer the mixture to a greased casserole dish. Top with shredded cheese.
Baking
- Bake in the preheated oven for 25-30 minutes or until the cheese is golden and bubbly.
Notes
This casserole pairs well with a simple green salad and crusty bread. For storage, keep leftovers in an airtight container in the fridge for 3-4 days or freeze portions for up to three months.
