Ingredients
  

Custard Base
  • 2 cups Heavy Cream Can substitute with half-and-half for a lighter option.
  • 4 large Egg Yolks Use large eggs for accurate measurements.
  • 1/2 cup Parmesan Cheese, grated Other hard cheeses like Gruyère or aged cheddar can be used.
  • 1 small Shallot or Onion, finely minced Enhances savory notes.
  • 1 clove Garlic, minced Adjust amount to suit taste.
  • 1 pinch Cayenne Pepper For subtle heat; Old Bay seasoning can be added for seafood flavor.
  • 1 tbsp Granulated Sugar For caramelization; brown sugar can be used for deeper flavor.
Crab Meat
  • 1 cup Fresh Crab Meat Opt for lump or jumbo lump for best texture; check for shells.
Optional Garnishes
  • to taste Fresh Herbs (dill, parsley, chives) For garnish and added flavor.
  • drops Truffle Oil Optional, for elevated flavor.

Method
 

Preparing the Custard Base
  1. Preheat the oven to 325°F (160°C) and prepare a roasting pan by filling it halfway with hot water.
  2. In a medium saucepan, heat the heavy cream until steaming, then add minced shallots and garlic. Simmer for 2-3 minutes and let cool slightly.
  3. In a mixing bowl, whisk the egg yolks until pale. Gradually add the warm cream mixture while whisking continuously.
  4. Stir in the grated Parmesan, salt, black pepper, and cayenne until fully combined.
Adding the Crab
  1. Gently pat the crab meat dry, ensuring no shells remain.
  2. Fold the crab meat into the custard mixture carefully.
Baking the Crab Brulee
  1. Divide the custard among ramekins, filling each about ¾ full.
  2. Place the ramekins in the water bath and bake for 35-40 minutes until set but slightly jiggly.
  3. Cool to room temperature and then refrigerate for at least 2 hours.
Achieving the Caramelized Crust
  1. Evenly sprinkle sugar on each custard just before serving.
  2. Caramelize sugar with a kitchen torch or under a broiler for 1-2 minutes.
  3. Allow the topping to cool and harden for a minute before serving.

Notes

Serve warm or at room temperature. If making ahead, store in the fridge and caramelize before serving.
