Prepare the Custard Base
- In a small saucepan, heat 2 cups of heavy cream over medium heat until it's warm but not boiling. Remove from heat and set aside.
- In a medium bowl, whisk 4 large egg yolks with a pinch of salt and pepper until the mixture is smooth and pale yellow.
- Slowly pour the warm cream into the egg yolk mixture, whisking constantly to avoid curdling.
Incorporate the Crab and Flavorings
- In a small skillet, sauté 2 tablespoons of chopped shallots and 1 clove of minced garlic in a splash of olive oil until fragrant and translucent, about 2 minutes.
- Add 1 cup of lump crab meat to the skillet and toss gently to warm through. Stir in 2 tablespoons grated Parmesan if using.
- Gently fold the crab mixture into the prepared custard, ensuring even distribution.
Fill the Ramekins and Bake
- Divide the crab custard mixture evenly among 4 small ramekins. Place ramekins in a deep baking dish.
- Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins.
- Preheat the oven to 325°F (160°C) and bake for 30–35 minutes, or until the custard is set but jiggly in the center.
- Cool to room temperature, then refrigerate for at least 2 hours.
Caramelize the Topping
- Sprinkle 1–2 teaspoons of granulated sugar evenly over each custard.
- Use a kitchen torch to caramelize the sugar until it forms a crispy, golden crust.
- Sprinkle with sea salt flakes or garnish with fresh herbs.
Notes
For best results, use fresh crab meat and avoid overbaking the custard. Serve immediately after caramelizing for best texture.
